Central Alaskan Yup’ik:
People pick the the young white rhizomes from lakes, very early in the spring when they are first sprouting. The older plants are said to have a bad taste and are not gathered. They must be boiled before eating, and can be made into akutaq or eaten with seal oil or meat.
